In 2018, Master's student and former cook, Robin Sheriff, started a dissertation.

The subject was alcohol, and it led him all the way to Japan.

Just around the corner from where I lived in Kyoto, there was a sake brewery.

And sake is fermented rice. Sake is incredible. It's my favorite drink in the world. The brewery had been in the family since the 1700s or something.

And I just knocked on the door one day because I was like, I need to add something to my, my to my thesis and the guy turned up at the door

he took me in and it was a brewery it was the same big steel tanks the same white wash clean floors

those of guys in white wellington boots so far so familiar but upper staircase was a room full of surprises.

This was the Koji Moro, the Koji Room.

I'd never heard this word Koji, and this is the heart of the sake brewery.

This is where it all comes from.

And so we went up the step ladder
