reasons. First, if I am processing tomato paste or tomato sauce or spaghetti sauce, the amount of time that a

tomato that's a paste tomato has to simmer down to get into that thickness is so much more reduced

compared to one that is very juicy.

Another thing is if I'm doing salsa or diced tomatoes or anything like that, having a paste
