before. I'm like sort of back in civilian life, but when you're working in restaurants, you never

want the days off that everyone has off. I didn't know that. When I first started cooking, I got my

first schedule, and I remember like, Damon or Marco at craft, they were like, here you go, and I was

so stoked. I was like, oh, so there's Sundays off. Amazing. And I'm like, somebody's like, you idiot,

that means that you're the most disposable person. You don't want you here. They chose for you not

to work on the busiest nights. Yeah. Yeah. Your liability. And it took me some time, because like,

that first year, two years, when you're sort of entering the world of cooking, you miss the lifestyle

of what you depart, right? Which was summer holidays, vacations. I couldn't even tell you what
