and the color in plants is a clue to their healthfulness. We know we need to consume more plant foods.

We know plant foods are good for us, but what is it about the color that makes them so healthful? The answer is in the phytochemicals.

Phytochemical, also called phytonutrients, are from the Greek word for plant, phytop, phyto, and they are manufactured by plants in order to protect
