What is ultra-processed food? And do we really know what it’s doing to our bodies, our health, and the planet?
Chris van Tulleken is a doctor and TV presenter who says most of the food that we eat isn’t really food. “Whether you're eating a burger, or a piece of fried chicken, or a breakfast cereal, there are illusions of texture. There will be little crunches and pops and snaps and greasy bits and dry bits and chewy bits. But it's all inhalably fast-to-eat and the hormones that tell you to stop just can't keep up.”
His latest book, ‘Ultra-Processed People’, explores how ultra-processed food is designed to fuel addiction and is creating an epidemic of diet-related disease.
Today, Chris joins Krishnan Guru-Murthy on Ways to Change the World to discuss the dangers of a UPF diet, and why urgent government regulation is needed.

0:32.1 | going through a sort of radical dietary change. So I'm absolutely fascinated by |
0:36.4 | the ideas in your book and what you're saying. We better just lay out our terms, |
0:41.2 | what we're talking about, first of all. So what is Ultra Processed Food? |
0:45.7 | So Ultra Processed Food is not an informal term like junk food. It's a formal |
0:50.1 | category of foods. The definition was developed about 10 years ago and there's a |
0:54.8 | very long scientific definition, long because it has to encompass so many |
0:58.6 | different processes. But it boils down to this if it's wrapped in plastic and it |
1:02.0 | contains at least one ingredient that you don't typically find in a domestic |
1:05.9 | kitchen, then it's Ultra Processed Food. So things like Xantham gum, emulsifiers, |
1:11.6 | flavorings, sweeteners, artificial or natural sweeteners, those are all |
1:15.8 | examples of ultra processed food additives. So this is often things like ready meals |
1:20.2 | that look like stuff that you might cook, but have actually got something extra in. |
1:24.3 | The way I'd think about it is for every real food, there is an ultra processed |
1:28.7 | alternative that is a better way of extracting money from us. So much of it is obvious junk. |
