Today's guest is the fantastic chef, Jessica Cazzo of Squirrel in Los Angeles.

We recorded this recently, I think last week, after I did a podcast with chefs Chad Robertson

of Tarteen and Chris Bianco of Bianco, Pizzeria and a few other restaurants in Arizona.

And they teamed up to open up Tarteen Manufacturing down in the row, which is downtown Los Angeles.

And it's a small world, right?

And you might hear Jess drop the name of Chad and Chris Bianco.

And it's only because we recorded this right after Chad and Chris.

And we'll get to their podcast down the road.

It's maybe a little bit weird if you're a regular listener because we've been recording

and releasing podcasts that we've done two, oftentimes three months ago because we've

been banking a lot of these in anticipation for the birth of our first child.

So this is a fresh off the press podcast with Jessica Cazzo.

And I wanted to do that because I thought it might be a nice book end to the last week

podcast that we did with Lollis Eli, the great food writer, journalist, now screenwriter.

And one of my favorite conversations I've had all year, and where we talked about judgment

and food and acceptance and change in just how we understand food in today's world with

the words and such.

One of the conversations that I wanted to have with Jessica was the fact that I feel

like she's criminally underappreciated.

And that's, I think, something a lot of people won't agree with because squirrels and squirrels
