| 0:14.0 | So you always want to eat cooked mushrooms, okay? |

| 0:18.0 | Because mushrooms in their structure, they're different in plants, and their membranes, |
| 0:24.0 | and the mushroom is a fungus, have kaitens in their membranes, okay? |
| 0:29.0 | Now, kaitens are also the material, and the exoskeletons of arthropods, |
| 0:34.0 | like crabs, lobsters, shrimp, and insects. |
| 0:39.0 | And that substance is completely indigestible. |
| 0:41.0 | You can't digest it. |
| 0:42.0 | And so when you're eating these mushrooms that are raw, you might have a stomach ache. |
| 0:46.0 | Also, mushrooms have the precursor to making vitamin D2. |
| 0:52.0 | So, and this is just a side note. |
| 0:53.0 | You can actually take these raw mushrooms and leave them out in the sun for a day, |
| 0:57.0 | and you will then build up more raw material to be making vitamin D2, |
| 1:02.0 | which will then be converted to D3. |
| 1:05.0 | It's a little side note, but the main point of this video is just to cook your mushrooms, |
| 1:09.0 | steam them, so now you can actually digest this material a lot better, |
| 1:14.0 | and you don't end up with a stomach ache. |
