with her dear friend, The Living Legend, Jacques Pap Pan.

I'm Frances Lamb, and this is The Splendid Table

The other week I heard about a guy whose grandfather was around in 1776 when America declared

independence and whose grandson is still alive today.

And okay, the math sounds kind of wild to me, but really the wild thing is that even though

some things seem like totally ancient history,

there are always people who have lived through the magical time bridges that connect us to the past,

who've lived to see unimaginable change through their lives.

And in the food world, there might not be anyone who's seen more unimaginable change than Jacques Papin.

When I was growing up, he was a guy on TV who had a smooth accent

and could cut up a chicken like a chicken cutting machine sent back from the future.

But he learned his chicken skills while apprenticing on the rear of man who was the sous chef of Auguste Ocophier,

the man who basically

invented French au cuisine as we know it. So think about that. Jacques Papin is a chef who's both

an heir to the high priest of classical French cooking and the man who helped pave the way for

today's chefs to be Instagram stars.

And so we were honored to be invited into Jacques's home to talk about his life and career.
