Hi everybody, this is Joe Lample, the Joe behind Joe Gardner Gardner and thanks so much for joining me today for the Joe Gardner show

Okay, so about today I think you are really in for a special experience this episode is a fascinating and unique discussion with one of the great

chefs and thought leaders in the world, literally, around how our food is grown and sourced these days and how we all play a really important

role in shaping the way we look at food to ensure a sustainable food system and that includes

however we source what we eat from

growing it at home, where we buy it, where it's from and even if it's in season.

So what you're going to hear today is the extracted audio from my complete television interview

with Chef Dan Barber for an upcoming episode for our National PBS Series Growing

a Greener World. That's the show that I host and produce. But anyway,

after going back and listening to this interview, I knew the content from our

discussion was just too important not to share in its entirety, which is why you're hearing it today is a standalone

podcast episode.

So to set the stage today, this is a discussion centered around how we look at the food on our plate and how maybe with the vision and influence of people like Dan Barbara

We can change that I think it's safe to say that more often than not at least the masses, maybe not so much for this group, but generally we don't give much thought to that food before us three times a day, where it came from and how it was grown and how flavorful is it really if that meal

included animal protein was it ethically raised and processed and are we even

eating in season or do our demands for what we want drive the supply chain to

provide us whatever we want to eat when we want it. So this is what today's

podcast is all about with I think one of the best people to talk about it.
