(2:30) What she found out was a symptom of metabolic problems. Dr. Shanahan was one of the early voices who emphasized the toxicity of seed oils. Her background in biochemical engineering transitioned to medical school; however, her personal medical issues led her to a deep dive into health. Being "hangry" is a sign of insulin resistance, which is a stage of metabolic disease. New standards of testing need to happen; she's a big believer in using the HOMA-IR testing. It's a similar effect of oxidation as cigarette smoking. Vinnie asks her about her list called the "Delightful Dozen." (35:00) Free radical particles are caused by oxidative stress; vegetable oils are "oxidative stress in a bottle." (42:30) Empty calories from processed foods and sugars can cause them too. She also challenges the use of protein powders. (46:00) Respecting Nature and how it works is important; trying to "outsmart" nature is a dead-end game. (54:00) The energy model of insulin resistance has to do with your body not being able to use its body fat as fuel. (56:00) Her book "Dark Calories" provides information that can help you reduce cravings while you heal from insulin resistance. (57:00) Working Against Nature Vinnie asks Cate how can people do better. (59:00) She provides several practical food suggestions. "Root cause" knowledge will help you. They pivot to cholesterol.
