0:40.2	I'm going to make a dish that I mentioned when I had Mark Ladner on the podcast.
0:43.9	When I was in New York City, we sort of did a pre-opening diaries about his reopening of Bobbo with Stephen Starr.
0:50.7	And for those that don't know, Mark Ladner from Massachusetts.
0:56.3	So Latner was the chef of Bobo, like before he was the chef at the Posto, both were
1:03.9	the restaurants under the Batali-Bosteanche Empire.
1:07.1	But a lot of my friends worked under Mark Latner.
1:11.1	He was widely respected as one of the great chefs.
1:14.6	And he was also running Lupa, which was this sort of like Roman Trotaria.
1:21.5	And it was in the West Village.
1:23.7	And I remember in 2000, we were at Kraft, my partner, Liz Benno, Liz Chapman, then Liz Chapman, she married Jonathan Benno, who was my sous chef.
1:36.5	It was hot as hell.
1:38.2	We're on 19th Street.
1:40.5	And the power went out because manhole, the manhole covers exploded on 19th Street.
1:46.0	So the power went out, we put dry ice in there, a sweltering hot day.
1:50.0	And unfortunately for Tom Clikia, we just couldn't operate that day.
