Ashley writes in today's ditch the drive-through recipe, Caprice Chicken. If you're not in first trimester survival mode, this recipe is for you. First, gather your ingredients: thin sliced chicken breasts, cherry tomatoes, mozzarella, basal glaze, fresh basil. Cook the chicken on the stove top in a pan with some olive oil or avocado oil, salt pepper, Italian seasoning, whatever sounds good. Once about halfway through, flip the chicken and throw in some grape or cherry tomatoes. Keep them in long enough for them to start blistering. Once chicken is nearly cooked, cover with slices of mozzarella, so it starts to melt onto the chicken. Once finished, drizzle the balsamic glaze on top and garnish with fresh basil.
