It's really helpful to empty and roast the whole pumpkin or the whole squash for a little bit of time before you put the stuffing or dressing or salad or whatever inside of it.

Because just like stuffing a turkey, once you get that like density inside of it, it's going to take a lot longer to make the outside match the inside temperature-wise.

And that was a really popular episode with lots of good feedback from y'all.

But this time, we're talking about the kind of vegetarian dinners or main dishes that you might serve at a dinner

party or for the holidays. In fact, our original title for this episode was show-stopping vegetarian

dinners, which really, like, put on the fresh show stopping.

It just seemed like a big word.

We changed it to celebratory.

I think celebratory is a little bit more clear, honestly.

Although now I'm like second guessing.
