I have a confession.

I've been telling you people since Friday that over the weekend, you needed to take your turkey out to make sure we're still like, guess who forgot?

Such an idiot. I've been telling all you guys. Got to take your turkey out, well, it's, it's, I've got, mine is taking care of, an ice bath, water and ice, that'll be done.

I'll be ready to, I've decided to just dry brine it instead of the, the, the brine and soak it overnight.

I'm just, just a dry brine of some salt and brown sugar and rub it all over the skin and under the skin very lightly. You don't want to do it too much. And by tomorrow morning, I'll put it on the smoker. I'm going to cut the backbone out, spatch cock it, lay it flat. It'll cook more evenly. So I got to cook the turkeys. I'm going to cook it tomorrow. I'll smoke it on my rec tech. And then we'll heat it up on Thursday. Done right. It won't dry out. But yep, yep, yep. After after days and days and days of telling you guys, make sure you get your turkey out, make sure you get your turkey out. I was so busy making sure y'all got your turkey out. I forgot to get mine out. It's the way it works.
