A couple of years ago I was on a long flight, like a 17 hour flight. It takes like 18 hours to get from New York to Hong Kong so I could go and retreat in Thailand.

And I woke up at one point and for some reason I was so tired there I just turned on the little TV set the first

thing that came on was one of those cooking shows like Top Chef and the idea of the cooking show is that they had all these different

chefs and they would put out the different ingredients that

they would, the show would choose and these chefs wouldn't know.

And they had to work with whatever ingredients.

And one chef was like really caught up

and just how strange the ingredient was.

One chef was really missing something

that he really always used in his cooking like

garlic or something or ginger was just really focused on what wasn't there.

Another chef was really caught up with the fact that there was octopus.

that he didn't really focus on everything else that was available. Of course, it was one chef that got really amazed by the quality of the ingredients

and immediately started experimenting. and didn't get caught up in what was not there that he wanted or what was

not there that he wanted or what was there that he didn't like or having fantasies of

it being an entirely different set, he just immediately turned to what is and kind of got along with it.
