My name is Chris Ying and today we are stewing up some ox tails.

So as we were recording this episode, we were doing a little uninform speculating about

why they call it an ox tail.

And being a complete and utter city slicker, I could not tell you what an ox actually

is or the difference between an ox and a bull or a steer.

I mean, I thought they were all just cows.

If you're out there and you're as a grunt and curious as I was, here's what I found out.

The ox, the steer, the bull, the heifer and the cow all fall under the collective term

cattle.

We typically say cow when we're pointing out a single, big, delicious beast wandering

on a field over there.

But technically a cow is an adult female that's given birth to a calf.

Out of that, it's known as a heifer and ox is a fully mature, castrated male.

Before it reaches maturity, it's known as a steer and a full grown male that has its bits
