We think that we just put food in our mouth and like, da da!

It like magically becomes the energy that we need, but we don't spend very much time talking about or thinking about how that food actually gets

digested and assimilated. To embrace smaller scale stuff like you've been doing

here where you're working these source chains to embrace that and to

embrace the inefficiency of doing something particular like creating a high quality

meal that is also it's kind of like biodiversity, it makes you more

resilient, whereas hyper-efficiency makes you more fragile. Isn't that interesting?

Just even focusing on the quality of food

and the work that goes into procuring it

has changed the narrative in my own head

about what it means to eat food,

which is pretty cathartic.
