I think this is our moment. We broke for lunch. I had two beers and Mike a little saucy on this one. He's ready yet saucy. Let's get right to the difficult question. Smokey Husky, Nikki L.16 writes, we're all from a River the Liza's views on eliminating the use of less used single plastic. But do you share those same views? And if so are you able to successfully implement those views in your life and your work life as well? I graduated culinary school in 2017, but I've been working in restaurants and bakeries since 2000.

2013, and I always feel so guilty how much plastic I end up having to use each day. Do you guys have any advice on using less plastic in the kitchen?

Yes. I think I was a little more focused on this before we met. He was. You had all the healthy views that I knew, but I'm slowly becoming you.

I'm slowly becoming you as well as we grow into one way over time. Goofy forces. I'm super one.

The restaurant side of it is tough. There's as you know in the restaurant business, it's just a huge part of it. Luckily, California has a lot of legislation moving in those directions.

I remember the last time I saw Styrofoam. That's like almost a thing of the past.

Yeah, but it's actually interesting data about like it's just we always talk about this like with environmental impact. It's like which part of the environment do you want to focus on?

Yeah. And so I think it actually requires less carbon emissions to make Styrofoam than it does to make single use plastic. But that's all these complicated things.

I also want to say it's tricky when you go to like a green restaurant like a vegan place. First of all, it's not necessarily better because it's deep fried. So maybe you're not hurting an animal, but it's but then they give it to you in a plastic container.

Yeah. And again, it's that thing of which part do you want to hurt yourself?

Do you want to hurt yourself? An animal, the planet, carbon footprint, trees, like what do you want to kill today?

So you want to be vegan, but then your almond milk is destroying drought stricken, California, water supply. So try to educate.

And anything that you know that you can do that is guaranteed to be better. So less waste eating all your food versus throwing it away.

No, pokeable.

The pokeable. There's pokeables on every corner. You don't deserve fresh tuna on every street. What are you a shark? You don't deserve it.

And then it's always in a takeout thing that's plastic. And then they're always like it's compostable. No, it's not. You got to go to commercial composting facility. You don't know where those are.

It's compostable, but doesn't mean it gets composted. Just because it's compostable if you throw it into a landfill, it's not going to compost.

Yeah, be as chuggable doesn't mean you should chug all your beer. Fair point. I'm able doesn't mean I'm going to do it.
