All right, I'm pumped to back to the roots was founded by Alejandro Vales and Nikhil Aurora.

They came across the idea during a class lecture of being able to potentially grow gourmet mushrooms entirely on recycled coffee grounds.

Too cool. Inspired by the idea of turning waste into wages and fresh local food,

they became full-time urban mushroom farmers and back to the roots was born.
