So there's fire alarms, there's orientation, there's all kinds of shit going on in the background.

But we didn't really have any time.

So we took about like 45 minutes of Joe's time and we're really lucky to get any of Joe's

time to convince her to record again.

She's going through so much right now.

And a lot of Joe's struggles right now are around her identity and the denny of her food

as a chef.

He's Korean but I can tell you personally that there's many facets to it.

For starters, Korean cuisine is seen as this inferior thing to Japanese.

Although it's obviously a lot cooler, historically, you know, Japan has colonized Korea and there's

been strain relations and now's not the time or place to talk about that relationship

but it's a complicated one at that.

People's idea of Korean food around the world is also trapped in a bubble in a lot of

different ways.

For example, the Korean food there is largely defined by one or two ways of immigration.
