With the rise of low-carb diets, including Paleo and ketogenic approaches, grains have come under fire as a food source. They are wrongly accused of being responsible for everything from indigestion to weight gain. Fortunately, science doesn’t support the notion that all grains are bad; at best, the research shows that we simply need to be selective about our grain consumption—and that good grains can be part of a healthy, balanced diet for most people.
