My name is Chris Yang and on today's episode, a tale as old as time.

What's a person to do when you've got nothing but old bread or rice and not enough meat

to go around?

The same thing everybody does.

Hack it all up, mix it together and cook it.

The meatloaf is fundamental.

A dish forged in the crucible of necessity and frugality.

You use bread crumbs or really whatever starchy leftovers you have laying around to both

fill out the loaf and simultaneously tenderize it.

And in most parts of the country, meatloaf goes hand in hand with its life partner, ketchup,

whose acidity acts as a foil to the richness of the loaf and whose sweetness makes it more

palatable to children.

You throw in some mashed potatoes and baby, you got Americana on a plate.
