Olivier Cousin is an old school vignérons or wine maker in France's Loire Valley.

The 59-year-old has a deep passion for protecting the earth and protecting the livelihoods of small independent wine makers.

It's an admirable job.

We, the vignérons, have really got the chance.

We don't sell only a product.

We also share dreams, stories and hope for all those who want to return to the earth.

In the Anger region, which is less than two hours by car, southwest of Paris,

Olivier is known as the guy who distains modern wine making.

He farms using draft horses instead of machines, harvest by hand, grows grapes without

synthetic chemicals and lets his wine age without additives.

In France, this makes Olivier a wine rebel.

Today, in this modernization era,

the people of the region think I am a little crazy.

But Olivier would go from seeming crazy to risking becoming a rebel of the state

when his fight for natural wine brought him his fiercest opponent yet.
