hello and welcome to today's independent travel podcast with me, Simon Calder. It's

Thursday the 12th of June. I have the huge pleasure of being on the beautiful island of

Myorka. And better than that, I'm also talking to arguably the foremost chef on the island.

He is an Englishman by the name of Mark Fosh. His restaurant, Mark Fosh, is in the

Convento de la Miso in Palma. Welcome, Mark. Tell us the story of the restaurant. How do you get

one named after you? Well, luckily we opened the restaurant 16 years ago.

I think originally I actually called the restaurant Simplifosh.

And when we opened, I think we were, I'd had a Michelin style for a long time in the

middle of the island in another restaurant.

And I wanted to create a restaurant that was a little bit more laid back.

The cooking was a little bit more simple.

But little by little, we went on a journey. A few years later, we were lucky enough to gain a Michelin star.

And I think from then on, we just pushed forward year on. And a few years ago, I changed the

restaurant back to restaurant Mark Foch. Tell us about the cuisine that I would be getting

widely on the island of Mallorca. Yeah, we are very lucky here in Mayorkan. I think a lot of people

who visit the island probably don't realize that the island has some amazing ingredients.

We are blessed here on the island to have some great seafood, great lamb and pork, indigenous to the island,
