1:02.3	how we dress and she changed a lot of the perceptions. And she just turned an idea into a big,
1:09.1	big business and massive shout out to her for pivoting in the past 16 months to making masks.
1:15.7	In addition to everything else, remarkable. And a lot of her philosophy, a lot of her mistakes that

1:33.2	One is I think a lot of people in my profession and some of them are very successful chefs. So just
1:39.2	asking themselves, like, what the fuck am I doing? And there's no reason to name names or whoever.

1:50.3	we just got through one of the hardest years of our lives. And it was about keeping your head
1:55.4	above water. And that's done. And now everybody wants to go full occupancy. But we've had this
2:02.4	force sabbatical, this force time off that nobody wanted. And you know, I talked a lot of my friends
2:08.8	that are running restaurants. And they're just like some are more determined than ever. And a lot
