Chinese restaurant menus are huge.

At its heart, Chinese cuisine is designed to give people choices, even if they end

up ordering the same two or three dishes every time.

There was once a time when Chinese restaurants in the US served a few very specific types of Chinese food, that is,

Cantonese dishes from around Hong Kong and Guangzhou.

But now there are Chinese restaurants in America devoted to the cooking of Shanghai,

Shions, Sichuan, Taiwan, Beijing.

You can almost say it's a golden era for Chinese cuisine in America.

But as Chinese cuisine migrated to other parts of the world, the cooking also adapted to local

tastes.

Serve someone from Hong Kong a dish of American Chinese food, General So's Chicken, Crab Rangoon, and they might not even recognize it as Chinese.

I certainly didn't, growing up as an immigrant from Hong Kong.

It had me asking, where do these dishes even come from?

There is one dish in particular I keep thinking about. It's an American Chinese dish
