Summary

This week I spoke to my close friend, chef, author, and screenwriter Phoebe Lapine. She is one of the most creative and self-aware people I know, and I deeply admire her and her work. We met years ago when I interviewed her when her book The Wellness Project came out and then again for her last book which was about SIBO. She has a new cookbook out now, called Carbivore, which I have been learning to cook from. We catch up in this episode about the topic of this new project which is, of course, carbs: we get into what led to carbs being demonized by the diet industry, what sugar and carbs actually mean for our blood sugar, food sequencing, digestion, how overthinking all of this can be damaging, and how we’ve both been on the extreme ends and how to navigate that. Let us know if you listen.

This week, my dear friend of many years, so many years at this point, third appearance on this very podcast, Phoebe Lepine,

chef, author, this is her fourth book that just came out that we speak about at length, actually,

0:46.3

in this episode. I feel like often when anyone who's just written a book comes on, we either, you know, touch on it or I parse

0:58.5

out bits that I love, but we usually cover more holistically the writer as the author and

1:09.7

their history of how they got to where they are and all of that.

1:14.6

But we've done that with Phoebe because she has been on the podcast two other times.

1:20.9

And this time I really honed in on this new book that she wrote, which is a cookbook called

1:26.1

Carbivore.

1:27.3

And honestly, it fascinated me.

1:29.3

It's been a minute since we spoke about wellness and eating and digestion and myths

1:37.3

and how overthinking this sort of thing can be quite damaging, and it has been for me.

1:43.3

And I say at some point in this podcast

1:46.4

recording that Beebe is the only person I would talk about this topic with, or one of very few

1:54.1

people, if I'm being honest, because I never want things to teeter into an area that could be disordered eating-esque or, you know,

2:06.9

for me, I have to like be so careful about that because I'm so susceptible to it.

2:10.7

So anyway, I think that this episode is safe, but we do talk about eating and carbs and how and when and perhaps why carbs became
