Apologies on being a little bit late today, but no matter, we are going to talk about

garlic. So what we're going to talk about today, and there's a lot to talk about in the world of garlic,

is the difference between hard neck and soft neck garlic.

So in the early 1990s, people proposed that you could split garlic into two subspecies and they

based this on a garlic's ability to bolt the ones that bolted were called Allium sativum subspecies

Ophioskurodon, hopefully I pronounced that right.

And the ones that did not bolt were called Allium satum, subspecies sativum.

So that is the general classification of garlix.

And the more common phrase that you're gonna hear

is hard-neck garlic and softneck garlic.

But what is the difference between these two?

Well, the most obvious difference

between hardneck and softneck is how they look.

So hard necks are called this because they have a

flowering stem that grows straight through the center of the garlic bulb. Now this

is called a scape. Now we're going to get a little botanical here.

What this scape does is it produces an umbel,

which is a terminal pod in which bullbills are produced.

bullbills are removed from the scape when mature and planted in the same way as clothes,

although they need two or more seasons growth before they produce a different bulb.
