I had another question about green bananas

and is it okay to consume them on a ketogenic diet? Well Well there's something interesting about green bananas.

They're very, very high in something called resistant starch.

That means they're very low on the glycemic index. They do not spike insulin very much.

If we take a look at the glycemic index of green bananas, it's about between 40 and 60.

Okay, that's pretty low. Now, yellow banana, it goes up to 110 as it becomes ripe.

And as it turns brown, it goes up to 130. So that is like way off the scales.

So that resistant like way off the scales. So that resistant starch is gone.

Now, and then you want to ask me, well what about plantains? Okay?

Well, you have to cook plantains. So anytime anytime you cook whether it's a potato or a banana

you increase the glycemic index so you destroy the resistant starch.
