Summary

An introduction to human nutrition, in which we discuss the nutritional importance and role of carbohydrates, fats, proteins, vitamins, and minerals, before considering the effects of malnutrition, how it is measured, and its prevalence around the world. We conclude with an analysis of basal metabolic rate, reviewing evidence concerning its variability across persons and factors that affect it. Recommended pre-listening is Episode 18: Biochemistry Basics If you enjoyed the podcast please consider supporting the show by making a PayPal donation or becoming a Patreon supporter. https://www.patreon.com/jamesfodor https://www.paypal.me/ScienceofEverything

0:39.9

I'm your host, James Fodor.

0:42.4

Today, we're going to be doing the first in what hopefully will become a series of episodes

0:47.2

focusing on diet and nutrition.

0:49.8

So this is going to be largely an introductory episode.

0:52.2

We're going to talk about the major human

0:54.5

nutrients, so the macronutrients, carbohydrates, fats, amino acids, and then micronutrients,

0:59.7

vitamins, minerals, and other things like fiber. I'm then going to talk about different

1:04.4

types of malnutrition, so when nutrition is not adequate in various ways. So particularly

1:09.6

talking about undernutrition and overnutrition

1:12.6

as to different forms of sort of nutrition going wrong. We'll talk a bit about obesity and causes

1:18.2

of vitamin deficiencies and so forth. And then we'll conclude today's episode by talking about

1:24.5

basal metabolic rate, which affects how rapidly our bodies burn calories

1:31.3

which is obviously a very important component of in fact one of the major components of determining

1:36.9

the balance between weight gain and weight loss and so this will be useful background for a future

1:42.7

episode where I talk about the science between comparative diets.

1:47.6

Recommended pre-listing for this episode is episode 18, biochemistry basics. That will provide you

1:52.6

with some background relevant to some of the organic chemistry and biochemistry that I

1:58.5

discussed, particularly with respect to the macronutrients.

2:06.6

So without further ado, let's get started and start by talking about what is a nutrient.
