Well, every few years, Texas Monthly Magazine produces a list of the best barbecue restaurants in the state of Texas, which are thereby the best barbecue restaurants on the entire planet.

And I remember when I was a kid, there was one particular place that was always

near the top of the list. It was the city market in Luling, Texas. A lot of little towns in

Texas have city markets, but city market in Luling, Texas had perfected the art of barbecue.

And they were serious. It was so good that when you showed up there,

there'd be a line around the building,

and as you walked in, you would lead to the back,

and you would actually walk into the smoker,

where meat was being smoked.

And if you were a rookie, you'd leave the door open,

and they would yell at you.

What's the matter with you?

This is making magic back here.

Shut the door. You shut the door behind you, locking in that smoke, you would pay cash for your

brisket, and then you would walk out and have your life changed.

And that was the way it worked.

It was so good that when I was a college minister in College Station, Texas,

I found out that one of our volunteers was from Luling, Texas,

and I just handed her cash, and I said, every time you go home to see your parents come back with Brisket from that magical place,
