But saturated fat, it's not the most health-promoting fat source. It's probably the worst

fat source that is naturally occurring that we can consume at high levels. Because what it does

is when we consume it at high levels, especially for those who are genetically susceptible,

it will change the expression of the LDL receptor at the liver. And why is this important? Well,

if we're eating high saturated fat, the LDL receptor liver will take in less LDL. It'll allow more LDL cholesterol to circulate. What will happen is you'll have a whole bunch of LDL particles circulating, which is going to increase your risk of heart disease. And this isn't going to happen in one year, two years, three years, five years even. But the problem is, and this is something that really concerns me seeing all these extremely elevated LDL levels
