يحكي لنا فارس التركي في هذه الحلقة عن أبرز التحديات التي تواجه قطاع المطاعم في السعودية، التي تتمثل في الجهات الرقابية والعمليات التشغيلية وكيفية التعامل معها. فالكثير من المطاعم تفشل في تلبية حاجات المستهلك بسبب سوء الإدارة، من تكاليف الأطعمة وإدارة المخزون وحتى مراقبة الجودة والاهتمام بتجربة الضيف.
فمثلًا، يشكل استقطاب الكفاءات السعودية للعمل في قطاع المطاعم تحديًا كبيرًا. فإلى عهد قريب، كانت «ثقافة العيب» مسيطرة على المجتمع وتمنعهم من العمل في هذا القطاع. أما اليوم فهناك توجه كبير لدى الشباب للعمل بالمقاهي والمطاعم.
أما عن تجربة فطور فارس، فيرى مؤسسه أن سمعة «غلاء الأسعار» لا تشكّل عبءًا كبيرًا، فما يوفره المطعم من أغذية طازجة واهتمام عالٍ بالجودة في الخدمات المقدمة يعكس التجربة المميزة التي يقدّمها فطور فارس، خصوصًا في وقت تفتقر فيه المشاريع المحلية لتقديم مأكولات شعبية بجودة عالية.
تأثرت علاقة المطاعم تأثرًا كيبرًا بدخول تطبيقات التوصيل لقطاع المطاعم، وبزيادة عدد الزبائن الذين يرغبون باستخدامها. فإلى جانب النسب الكبيرة التي تحققها التطبيقات من أرباح المطاعم، فهي تمتلك بيانات وسلوك الزبائن، مما قد تدفعها للمنافسة فيما بينها مستقبلًا.
