When you serve this seven-layer dip at your party, you're pretty much guaranteed there'll be no leftovers.

The seven layers are...

First the bean dip, second, the avocado, third, season sour cream. Fourth, a sprinkle of green onion.

Fifth, sliced black olives.

Six, diced tomatoes.

We're going to layer the dip in a serving dish

that measures about nine inches wide by 13 inches long

by 2 inches high. Let's start layering. Spread two 10 ounce cans of the bean dip first. Any

brand will do, choose your favorite. Fresh, ripe avocados are great. Cut three avocados

and half lengthwise and separate the two sides. To remove the pit,

leave the avocado on the cutting board and gently thwack the pit with the sharp edge of the knife.

Give the knife a twist and the pit should pop right out. With a spoon, scoop out the avocado and put it into a medium-sized mixing bowl.

Mash it with a fork or a potato masher.

To keep the avocados from turning brown,

mix in two tablespoons of freshly squeezed lime or lemon juice.
