Fine. Excellent, excellent. The cocktail of the week this week is called the retired industry sour.

What? Retired industry sour.

I don't. For once I'm not enamored with the name.

Okay, it has one ounce each of cinar, cinar. I like cenar. Green

chardruse. I like green chardruz. Simple syrup.

Yep.

And lime juice.

Okay.

And also one egg white.

Oh, fo me.

Now, for those of you who are like me and get squeezed out by the idea of a raw egg white being shaken up in your drink.

Because egg whites are gross.

They're like gelatinous and gloopy.

Well, yeah, I mean you make them hot and then they turn white and solid.

Not for this. You just put it in gloopy and shake it up.

I thought you'd just have to foam it. Isn't like a piece of go sour you foam it up. I thought you just have to foam it isn't like a piece of

sour you foam it up? You just shake it real hard and that's why it gets foamy.

But it does. This one's supposed to get foamy too, right? Yeah. I mean,

otherwise yes, it's it's slimy and see-through. Who wants a slimy

see-through drink with a big glob of raw egg white in there?
