| 0:45.3 | Well, if you've listened to this podcast for any length of time, you know that I've talked a lot about preserving. |

| 0:56.6 | this is because that was a huge focus for me, well, it still is, but it definitely was a huge |
| 1:01.5 | focus for me as I began my first garden and as I began trying to do everything I could |
| 1:07.7 | to grow as much as I could and preserve as much as I could. That way, not only could |
| 1:13.5 | I have some fresh food in the middle of the growing season, but I could also have food put up for the |
| 1:18.9 | off season, like January, when not everything is coming out of the garden. But maybe you don't want to do all that work of preserving. I hear that |
| 1:30.6 | a lot, especially from new gardeners or maybe gardeners that just don't have a lot of time, |
| 1:35.7 | or maybe you don't have a lot of space and you don't think you're going to have enough to preserve. |
| 1:39.5 | I totally get that. Or maybe you just want to focus on fresh eating. That's why you grow a garden and that's |
| 1:46.0 | what means the most to you. I have to be honest, focusing on growing for fresh eating in my garden |
| 1:53.6 | was not something I focused on initially. But now I'm leaning into it more and more, and I'm absolutely loving it. |

| 2:07.8 | and I would not cook it or eat it fresh because I thought, I need to preserve this instead. |
