Summary

In this conversation, Andy Felton invites us to see our bodies as organic gardens—living ecosystems that flourish or falter based on what we plant in them. He makes a clear, compassionate case that our modern, convenience-first food culture has left many of us undernourished and overwhelmed, not because we lack willpower but because we’ve been trained to outsource the most human act we do: cooking. With a steady, nonjudgmental tone, Andy explains how ultra-processed foods and chemical shortcuts confuse our biology, while simple, authentic ingredients restore it. He shares the liberating idea that you don’t have to be perfect: start where you are, aim for an 80/20 approach, and remember that every bite is information your cells can use to move you toward strength, clarity, and calm. Then he turns our gaze backward to move forward—toward traditions like sprouting, fermenting, milling, and making real bread; toward seasonal produce and meeting the growers who nurture it; toward meals that are cooked with hands and shared with people. Without preaching, Andy weaves in a vision of health as “strength for life,” not an end in itself: energy to play with your kids, to serve your community, to live your values. If you’ve felt unprepared to navigate a broken food culture, this episode offers a hopeful path home—one skillet, one simple recipe, one small habit at a time. Welcome to the 1000 Hours Outside podcast. My name is Ginny Hurch. I'm the founder of 1,000

0:04.2

Hours Outside. And I have the world's most gracious guest today because I've had to reschedule and then we just

0:10.4

hopped on in my whole sound is a total mess. I don't even know what happens. But Andy Felton is here.

0:16.1

He's written a phenomenal book and we both have forwards by the same person. So we are connected there.

0:22.6

The book is called Nourished by Design, a Christ-centered approach to nutrition. The author,

0:26.9

Andy Felton, is here. Welcome, Andy. Thanks so much for having me, Jenny.

0:31.3

So I talked to Joel. So Joel Salton wrote both of our forwards and he said he reads

0:35.5

the whole book and that there are people that he

0:37.8

says no to because he doesn't maybe feel aligned with what they have written. So talk to me about

0:43.2

that whole process because I asked and I for sure thought he would say no. And then he said yes.

0:49.1

And his forwards are so good. How did that end up happening? Yeah, exactly the same. I was like, you know what?

0:55.7

I'm writing this book about Christian nutrition. And as I was doing some research and I'm reading

1:01.7

these Joel Salton books, I'm like, oh my gosh, this guy has got it figured out. Like,

1:06.8

he is really nailing this theme that I'm looking for because I think that was

1:12.1

really the, the missing piece. And so once I really dove into his stuff, I was like, I've got to

1:17.4

get this guy to write a forward, just because of how good a writer he is and, and just how much,

1:22.8

uh, he gets it, how much he understands what an embodied faith is supposed to look like. Even though we go at it

1:28.9

from two slightly different perspectives, him more on the agricultural side and mine more on the

1:35.0

nutrition side, but there's a huge overlap. And so I just reached out to him via email. I sent him

1:41.2

the manuscript and I did not expect that he would say yes, but man, he was so gracious.

1:48.0

And like you said, he said, I'm going to read the whole thing.

1:51.4

He read it, sent the forward over.
