Tri-tip for the first time ever. It was a different process than I'd ever used before. Also, I

smoked it for about two hours at 225 degrees and then put it on direct heat and seared

it. It was a little bit overdone, probably more towards medium than medium rare, but the

flavor was delicious.

I would have sent it back. So what am I supposed to know what tri-tip is? It's a beef.
