In Geneva today we have Swiss chocolate, Swiss watches, and Swiss

Army knives. No, really? Cacao beans and sugarcane, the essential ingredients in chocolate, were first brought to Europe

by Hernando Cortez in 1528. Early primitive chocolate production was thereafter centered in Bourbon, France and Habsburg, Spain, but fierce

persecutions, starting with the St Bartholomew's Day massacre in 1572 and culminating

with the edict of Fontainebleau in 1685 sent waves of Protestant refugees into exile, primarily to the Swiss cities of Geneva,

Lausan, Bern, Vée, and Zurich.

these newly transplanted craftsmen

made their new homeland a hive of fruitfulness and a

prosperous trade center. Daniel Peter, a Swiss confectioner, descended from a long line of Alsatian Huguenots, concocted
