Joe's mother Maria was a true Nona, an Italian grandmother, an incredible cook.

He wanted to honor her after her passing. So he started and opened a restaurant called

Enateca Maria on Staten Island in New York. The idea behind it when he opened it 18 years ago in

2007 was to have Nona's in the the kitchen just like he had at home.
