There's a little secret that most people don't know about the highest quality wineries

They'll say, you know, as they start their year, okay, we're going to bottle, say 5,000 bottles of wine this year. And so they over-produced for that, produce enough for maybe 6,000 bottles of wine, but you know they've sold 5,000

they're ready to get 5,000 out and so that's basically all they do under their own label

and then when they're done they've got casks of wine left over that haven't been bottled.

you would normally pay.
