In many ways, Scotland and Red Deer are intertwined culturally. There's been a long history of sporting shooting

in Scotland, but in recent years, people have started looking at red deer more as a problem.

If you are trying to restore Caledonian pinewoods, for example, red deer are a big problem.

I'm Mark Stephen, and in this edition of Scotland outdoors I head up into the

hills around Finging in Aberdeenshire where gamekeeper and stalker Hedshand has been working with

deer for decades. Now in recent times Hedge has developed a friendship with chef Sanjay Bata Tariah

who's passionate about the provenance of the food he cooks so much so so that under Hedge's guidance, he is now a keen stalker.

As we drove up through the estate, Hedge described what we were actually looking at.

When we're driving through the wood here,

this is where we've got our natural region.

It's a no tolerance zone for deer in here.
