In many ways, Scotland and Red Deer are intertwined culturally. There's been a long history of sporting shooting

deer for decades. Now in recent times Hedge has developed a friendship with chef Sanjay Bata Tariah

who's passionate about the provenance of the food he cooks so much so so that under Hedge's guidance, he is now a keen stalker.

As we drove up through the estate, Hedge described what we were actually looking at.
