They dial in, like, every day, every bag of beans that they open has some different characteristics and qualities. So

every time they have a new bag that they pour into the grinder, they dial it in. They change the

you know, grounds, how many, how many beans they need for each pour of espresso. It's a science, it's an art, and they do a great job. And we don't roast our own beans.
