Why do so many find the book of Enoch so interesting?

Well, I think it's partly because it makes some rather spectacular claims about passages that are obscure in the book of Genesis.

And those are kind of dramatic ways of explaining passages that have long fascinated people

in the book of Genesis because they are so obscure.

And even people who maybe are not Christians or even religious Jews or whatever,

they get fascinated with this because it seems to fill out what are perceived to be gaps

in the book of Genesis.
