My name is Chris Ying and this week we've got a very timely Thanksgiving episode.

We have not one but two recipes courtesy of our special guest who is none other than Dave Arnold.

We've spoken about Dave Arnold a number of times on this podcast and many many many times over on the Dave Chang show.

But if you are unfamiliar with him, Dave is the founder of the Museum of Food and Drink.

He's the host of the podcast, cooking issues, he's an author, he's an inventor, and he's just generally an authority and guru and knower of all things having to do with the science of cooking.

We are huge fans of Dave Arnold. He has been a friend of Dave's and the Momofuku family for many many years. And if you know him or his work already, then you will agree that his not having been on this show yet has been an utter and complete travesty.

So we are correcting that Dave Arnold is our guest today.

And in addition to his many many professional credits, the dude loves Thanksgiving. I mean, he just goes all out as you're going to hear him describe in just a second.

And this week he has graced us with two recipes that are perennial favorites and presences on his Thanksgiving table, Parker House rules and his mom's Thanksgiving stuffing.

We're going to get into all of that in just a second, but really quick. I want to handle a couple of quick little business housekeeping items.

First, you will hear right away soon as I stopped talking that Dave Chang was not at his desk when we recorded this episode. In fact, he was stuck in a four and a half hour traffic jam.

During the only slot that the three of us could manage to get ourselves together. So his wife, Grace took the wheel of the car and Dave recorded this podcast from the passenger seat.
