Susan Monica wasn't exactly what you'd call average.

Born Stephen Buchanan in California in 1948, she served in the U.S. Navy during the Vietnam War

as an engineer before deciding to trade military life for pigs.

In the 1990s, she bought 20 acres of raw,

undeveloped land in Weimer, Oregon and set out to build a farm from scratch.

And farm might be generous. At first, it was just a thick patch of wild Oregon woods
