Summary

In this episode, I sit down with Dr. Dan Gubler, a chemist with a deep passion for health and wellness, to talk about something we don’t hear enough about — phytonutrients. If you’ve ever wondered how the chemistry of food actually affects your body, this episode breaks it down in a way that’s simple, practical, and empowering. Here’s what we cover: From Chemist to Health Advocate Dr. Gubler shares how his background in chemistry led him to study the connection between food, molecules, and long-term health. What Are Phytonutrients — and Why Do They Matter? Beyond macros and vitamins, there are thousands of plant compounds (over 30,000!) that impact inflammation, immunity, detox pathways, gene expression, mood, and more. Many are still being discovered. Food as Information We talk about how foods like apples, artichokes, and colorful fruits and vegetables contain unique phytonutrient profiles that communicate with your body on a cellular level. How to Cook for Maximum Benefit Simple tips on preparing food in ways that help preserve these powerful compounds. Whole Foods vs. Supplements We also discuss when supplements can be helpful, how they compare to whole foods, and what to look for when choosing quality products. This episode is such a good reminder that food isn’t just calories — it’s chemistry. If you’re trying to eat more intentionally, support your body naturally, or simply understand why whole foods matter so much, this conversation is for you. Bio: Dr. Dan Gubler (aka Dr. Dan) is a Ph.D. organic chemist, health educator, and formulation scientist redefining modern wellness through a molecular lens. With a deep focus on the bioactive compounds in foods, plants, and supplements, he bridges cutting-edge chemistry with practical, evidence-based health strategies people can actually use. He has built a highly engaged social media following of 1.4 million followers across Instagram and TikTok, where his short-form yes/no science reels regularly reach millions, translating complex biochemistry into clear, actionable insights. Dr. Gubler is widely published, holds many patents, and is the host of the podcast “Molecules Matter with Dr. Dan,”where he deep-dives into the molecules that shape human health. Known for cutting through hype with data, his work sits at the intersection of nutrition science, functional foods, and molecular wellness—helping people understand not just what to consume, but why it works at the chemical level. 0:21.5

Gubler, and he is here. Well, actually, I should tell you, he's been a chemist for years and years, still is a chemist, but has a huge passion for health and wellness and food and the chemistry of food and how food helps our bodies. And so I'm excited to just ask him a lot of questions. A lot of

0:39.5

you might know him from Instagram. He has a huge following on Instagram and is a really fun person

here. My pleasure. So grateful to be with you today. Well, like I said,

0:55.1

you're a chemist. And you now, though, have this huge passion for health and wellness and are

1:01.0

teaching hundreds of thousands on Instagram. So how did you go from chemist to health and

1:06.7

wellness person? I've always loved human health. and that was the reason I always wanted to be a

1:11.8

chemist. I've wanted to be a chemist since I was a young boy. My grandfather was a well-known chemist. He was part of a team that discovered vitamin B-1, its role in the body, and copper metabolism. Back in the day when people thought that, you know, copper metals, they didn't belong in the body. And so he was my idol.

1:28.3

I loved what he did.

1:29.3

I piled around in his lab.

1:30.6

And I saw that this that, you know, copper metals, they didn't belong in the body. And so he was my idol. I loved what he did.

1:29.3

I pouted around in his lab. And I saw that the science, the chemistry that he did, applied to human health.

1:34.7

So what I wanted to do is I wanted to use chemistry and science to improve health. And that's where it started.

1:39.9

Oh, interesting that you wanted to do that at such a young age. That's fascinating. Okay, so on

1:45.2

Instagram, you call yourself the molecular expert. So why is that? So when we talk about

1:51.3

organic chemistry, it's all about molecules. And so people might be like, organic chemistry,

1:56.7

does that mean organic farming or organic produce? Well, when we talk about molecules, there's two

2:01.7

different classes of molecules. There's organic molecules that contain carbon, primarily,

2:07.2

and there's inorganic molecules that basically comprise minerals. And so when we talk about the body,
