I've been following our guest for about a year or so on social media and have loved everything he stands for.

So I've been looking forward to this interview for a while. I've been trying to set it up and finally our schedules have aligned. But first, I'm going to bring

in my partner here, my business partner, my great friend, Mr. Jim Gaila. How you doing,

everybody? Hey, fantastic, Matthew. I'm also very excited for this conversation. So this morning,

like every morning, I walk out into the food forest and start harvesting food

and eating breakfast just off the trees everywhere.

And then Joe Heinzelman comes over.

And Joe is a chef extraordinary.

He's a mushroom producer.

And he brought over like, I don't know, 500 pounds worth of mushroom blocks.

And these mushroom blocks are spent mushroom blocks.

So now they're laying out in the field and we're putting them in different strategic

locations in the mulch all around the field.

So we're seeding the mulch with these mushroom blocks, which not only provides nutrients and the mycelial network creation, but it's also going to provide mushrooms.

It's just magical.

So anyway, things are good.

I'm soaking wet from the field, but here we are.
