I am mostly off this week, but I did promise the last week, despite the holiday, we'd be posting a pod, and here we are, and this one is appropriately about food. Specifically, believe it or not, clean meat, another one of these companies. I know we've done a few of these this year, but it really is one of the most

kind of interesting and heavily invested sectors at the moment, especially certainly in biotech.

And this one's a bit different, not just because they're really leaning in to this idea that

what they're doing

is not raising animals, but brewing their cells in industrial vats. They're called sci-fi

foods. And the chief executive is Josh March. What he's doing is not trying to bring 100%

brood beef, but mixing it instead with a small fraction of kind of those brood cells, while the

rest is plant-based.

And the calculus is that that mix will still bring the right flavor, texture of minced

meat, et cetera, but being able to dramatically reduce the cost of what it would otherwise

cost for just 100% lab-grown beef.
