Simeon, is that creepy? No, that's so nice. Also, I feel like if you actually knew me,

then you might not feel well. You know what? If you actually knew me,

you might not want to do this podcast. I have a ton of questions for you,

but I woke up also thinking, what would Simeon make for a new lover?

What kind of menu at like, I don't know, maybe it's the late night or something.

What would you, how would you design that?

You know, I think a big part of cooking for people for me is being really present and knowing

something about them and what will make them happy. It's hard for me to answer that question

sort of anonymously, but I also love the way that a few simple things.

I love watching people's faces when they realize that an ingredient that maybe they had

sort of written off as boring or bland can be transformed into something amazing.
